Cheese (Queso)

The History of Cheese can be traced from more than 4000 years. However, we have not any evidence or book can be traced when and where is the very first cheese made. Ones believed that the cheese was discovered accidentally from the animals stomachs bag which storage the milk. It believed that an enzyme in stomach called rennin caused the milk separated into curds and whey. Another possible explanation is by salting the curdled cheese for reservation purposes.

However, Where is the most important sheep cheese in the Spain - Manchego be made? 

There is evidence found that Manchego Cheese producted on the La Mancha plains even before time of Christ. The Evidence tell us we can back to iberian civilization was still in a relatively primitive Bronze Age. Ancestors of cheese-maker who only used milk of Manchega Sheep to make the Manchego cheese which give you the nuanced taste!

The Manchego Cheese DO can only be produced in restricted to designated parts of the provinces of Albacete, Ciudad Real, Cuenca and Toledo where all lie in the La Mancha region. Made with the Milk from Manchega sheep only, Aged minimum of 60days and maximum of 2 years. Even they can produced by pressing in a cylindrical mould only.

The Manchego Cheese can give you different flavours too depending on the aged time.

From Fresco (2 weeks, cannot classify as DO) mild flavour to Viejo (1 years or longer) which give you very sharp flavour with pepperiness.
